Blueberries and raspberries – freeze-dried and ground – give this sauce its red-fruit flavour and its natural colour (cochineal, E120), balanced by a touch of malic acid. Smooth, homogeneous and pourable at room temperature, it is the classic partner for cheesecake, panna cotta and gelato. Shake well before use.
